My local grocery store gets these in live, I’ve been wanting to try it but it kinda grosses me out idea of seeing people sucking their heads out. The real gold is the claw meat. It’s harder work, but worth it. I’m from Louisiana and never been a fan of sucking the heads, it’s mostly just spicy juice. Besides the tails though, i do recommend pulling the claws. It’s got a small bit of meat too. You don’t have to suck the heads, but with the bigger ones, stick your pinky in there and see if you get any of the orange fat, omg you don’t want to skip that. Yeah, my gumbo needs this ! They are better steamed in a butter sauce as well. The absolute best is in a red sauce over rice tho. I’m not sure I’ve had a seafood gumbo with crawfish.
